Porcelain Shanghai Dry Gin comes from the Porcelain Distillery, a family-owned distillery in Liaoning province, in north-east China. The family descends from a long line of traditional spice makers, and the gin was developed with Kai Seidenhefter, a gin distiller from Hessen in Germany. A Shanghai Dry Gin follows the logic of a London Dry: at least 90% of its botanicals come from China, every flavour is carried by distillation, and nothing is sweetened afterwards.
Eighteen botanicals go into this signature gin, among them Mongolian juniper berries hand-picked in Inner Mongolia, goji berries, Sichuan peppercorn, cardamom, coriander seed, almond, hazelnut, orange, lemon and grapefruit peel, mandarin and rose. They simmer overnight in Mulan, a 500-litre copper still with a European-style alembic dome. Fresh botanicals are then added through a vapour infusion chamber, and the spirit is refined through a six-plate column. In the Liaoning winter, outdoor air cools the condenser.
The nose opens on chamomile and mint with sweet lemon and lime. The palate brings candied mint, herbaceous and vegetal notes, and a slightly bitter citrus pith. It won a Silver Medal at the San Francisco World Spirits Competition in 2020 and a Silver Award at the World Gin Awards in 2022.
Each bottle is handmade ceramic, glazed and fired twice, finished with copper floral decals and a hand-applied label.
