Jean Dauvissat Père & Fils

Domaine Jean Dauvissat Père et Fils is based at Milly, on the left bank of the Serein just outside Chablis. The estate took its present shape in the 1950s, when Christiane, whose family held vines at Milly, and Jean Dauvissat, whose family held vines at La Chapelle-Vaupelteigne, brought the two holdings together; their son Philippe enlarged it from the 1980s. Fabien Dauvissat, Jean's grandson and the fourth generation of the family, has run the domaine since 2009 and returned it to estate bottling after it had stopped commercialising its own wine in the 1990s.

The vineyard covers a little over 23 hectares in 55 parcels across seven communes of the Chablisien: La Chapelle-Vaupelteigne, Milly, Chablis, Beines, Lignorelles, Villy and Maligny. About 18 hectares are Chablis, 4.3 hectares Chablis Premier Cru (Côte de Léchet, Fourchaume, Montmains, Vaillons in the Châtains sector and Homme Mort) and 1.4 hectares Petit Chablis; the range runs from Petit Chablis through village Chablis to five premiers crus. The Chablis and premier cru vines sit on Kimmeridgian marl and limestone, the Petit Chablis on the Portlandian limestone above it. No herbicide or insecticide has been used since 2011, the estate has been certified organic (Ecocert) since 2022, and biodynamic preparations have been used since 2018. Picking is by hand and fermentation runs on indigenous yeasts.

Everything is Chardonnay, dry, with citrus and orchard fruit, firm acidity and a chalky finish. Héritage comes from 0.21 hectare on the plateau of La Chapelle-Vaupelteigne planted between 1950 and 1960, where the soil is shallow enough for the roots to reach the limestone bedrock. Mont-Main Sourdelle is a 0.57 hectare parcel at Beines with a north to north-west exposure, across from the premier cru Vau de Vey, and is bottled as village Chablis. Arcana Cabinet lists three of the estate's wines: the village Chablis, Héritage and Mont-Main Sourdelle; the domaine's own range is wider.
