Héritage is a village Chablis from Domaine Jean Dauvissat Père et Fils, based at Milly, just outside Chablis. The estate took its present shape in the 1950s, and Fabien Dauvissat, the fourth generation of the family, has run it since 2009, when he took over from his father Philippe and returned the domaine to estate bottling. The cuvée comes from 0.21 hectare on the plateau of La Chapelle-Vaupelteigne planted between 1950 and 1960, where the soil is shallow enough for the roots to reach the limestone bedrock. Picking is by hand and fermentation runs on indigenous yeasts. Expect citrus and orchard fruit, firm acidity and a chalky, flinty finish. Serve with shellfish, a chèvre salad, or grilled sole. The estate has been certified organic by Ecocert since 2022 and has used biodynamic preparations since 2018.
