Mont-Main Sourdelle is a single parcel of 0.57 hectare at Beines, on the left bank of the Serein, with a north to north-west exposure across from the premier cru Vau de Vey. It is farmed by Domaine Jean Dauvissat Père et Fils at Milly, an estate that took its present shape in the 1950s and has been run since 2009 by Fabien Dauvissat, the fourth generation of the family. The parcel is classified and bottled as village Chablis. The Chardonnay is picked by hand, fermented on indigenous yeasts and raised partly in stainless steel tank and partly in 600 litre barrel, the two portions blended before bottling. Expect citrus, green apple and the flinty character of the Kimmeridgian soils. Pair with oysters, sushi, or a fresh goat's cheese.
