Côte de Jouan is a Chablis Premier Cru climat, and this Mise Tardive, late-release bottling from Thomas Pico's Domaine Pattes Loup is a 100% Chardonnay at 12.5% alcohol from the 2022 vintage. Pico, who has developed his family's modest holdings in Courgis since launching his own label in 2006, is known for extended élevage, often 36 months or longer, on select cuvées, giving the wines additional textural depth before release. Expect crisp citrus, green apple and the flinty, saline minerality typical of Chablis's Kimmeridgian limestone soils, layered with a touch more richness than the domaine's earlier-released bottlings. Hand-harvested with meticulous sorting, this is a precise, terroir-driven white. Pair with shellfish, sushi or a fresh chèvre.
