Beauregard is a Chablis Premier Cru climat, and this Mise Tardive, or late-release, bottling from Thomas Pico's Domaine Pattes Loup is a 100% Chardonnay at 12.5% alcohol. Thomas Pico, who took over his family's vines in the village of Courgis and has built Pattes Loup since his first vintage in 2006, favours long élevage of 36 months or more for certain cuvées, and this late-disgorged bottling from the 2022 vintage reflects that extended-ageing philosophy. Expect the region's classic combination of citrus, green apple and Kimmeridgian flint-driven minerality, given extra depth and roundness by the additional time spent ageing before release. Hand-harvested and fermented with indigenous yeasts, this is Chablis with real precision. Pair with oysters, goat cheese or a simple grilled sole.
