This village-level Chablis Mise Tardive from Thomas Pico's Domaine Pattes Loup is a 100% Chardonnay at 12.5% alcohol from the 2022 vintage, released later than the domaine's standard bottlings to gain extra time on lees. Thomas Pico has built Pattes Loup from a small family holding in Courgis since his first vintage in 2006, and is known for hand-harvesting, indigenous-yeast fermentation and unusually long élevage of 36 months or more on certain cuvées. Expect bright citrus, green apple and the flinty, mineral character typical of Chablis's Kimmeridgian soils, with a touch of extra roundness from the additional ageing. This is an accessible entry point into Pico's meticulous, terroir-focused winemaking. Pair with oysters, grilled fish or a simple goat cheese salad.
