Maison Hugues Pavelot is a négociant house founded by Hugues Pavelot in 2014, working from purchased grapes at the same address in Savigny-lès-Beaune as the family estate, Domaine Jean-Marc et Hugues Pavelot. It is a separate structure from the domaine. Les Belles Filles is a village-level climat in Pernand-Vergelesses, registered as Sous le Bois de Noël et les Belles Filles, and it is not a premier cru. The parcel faces east on stony limestone and was planted in the 1990s. Made from 100% Chardonnay, the wine is direct pressed, lightly settled and fermented on ambient yeasts, then held twelve months in barrel, about fifteen per cent of it new, and filtered before bottling. The 2022 shows citrus and orchard fruit, a flinty, mineral edge and fresh, well-balanced acidity. Pair with roast chicken, shellfish or a creamy goat's cheese.
