Montmains is a premier cru climat of Chablis on the left bank of the Serein, and it gives its name to the group that also takes in Butteaux and Forêts. Domaine Louis Michel & Fils, in Chablis since 1850 and run since 2007 by Guillaume Michel, the sixth generation of the family, raises the wine in stainless steel with no oak. Expect bright acidity, green apple and citrus zest, with the flinty, saline character of the Kimmeridgian limestone. Serve with oysters, scallops or a grilled sole.
