This traditional-method sparkling Vouvray is made from Chenin Blanc by Domaine François Chidaine, who took over his father's small rented vineyard holdings in Montlouis in 1989 and went on to acquire the Clos Baudoin in Vouvray in 2002. Chenin Blanc's natural high acidity makes it especially well suited to sparkling winemaking, and Chidaine ferments slowly through the winter in cold limestone cellars to build layered complexity. Now with over a decade of bottle age, this 2010 vintage shows honeyed, toasty notes alongside Chenin's signature quince and citrus character and a persistent, fine mousse. Serve as an aperitif or with a fruit-based dessert.
