L'Échelier is a Saumur blanc from Thierry Germain's Domaine des Roches Neuves at Varrains, made from Chenin Blanc grown on clay and limestone. Thierry and Marie Germain took the estate over in 1991 and farm it by hand. This 2021, at 12.5% alcohol, is bone dry and high in acidity, with citrus, green apple and wet-stone notes and a long, saline finish. It is hand-harvested and vinified with minimal intervention. Serve with oysters, goat cheese or grilled fish.
