Franc de Pied means ungrafted, own-rooted vines, uncommon in Europe since vineyards were replanted onto phylloxera-resistant American rootstock in the late nineteenth century. Thierry Germain, at Domaine des Roches Neuves in Varrains since 1991, keeps a parcel of own-rooted Cabernet Franc. This 2021, at 12.5% alcohol, shows concentrated dark red fruit, fine tannic grip and a mineral finish. It takes a few years in the cellar and goes with roast lamb, duck confit or hard sheep's milk cheeses.
