Terres is a Saumur blanc from Thierry Germain's Domaine des Roches Neuves at Varrains, an estate on clay and limestone that Thierry and Marie Germain took over in 1991 and farm by hand at low yields. This 2021, at 12.5% alcohol, is dry and high in acidity, with citrus, quince and a saline finish. It goes with shellfish, goat cheese or roast fish, and holds in bottle for several years.
