Mas de Daumas Gassac, in the village of Aniane in the Hérault, was founded by Aimé Guibert in the early 1970s with the guidance of the Bordeaux oenologist Émile Peynaud. The cooling influence of breezes from the nearby Cévennes mountains helps preserve freshness despite the southern climate. This red, labeled IGP Saint-Guilhem-le-Désert, is built around Cabernet Sauvignon, complemented by other varieties including Merlot, Cabernet Franc and Pinot Noir grown across the estate's varied plots. The warm 2019 vintage produced ripe, concentrated fruit. Expect blackcurrant, dark plum and a touch of garrigue herbs, with firm structure. Pair with grilled lamb, roast beef or hard cheese.
