Boréal is another cuvée from the Les Iconiques range by Champagne Clandestin, the négociant-grower project founded in 2015 by Benoît Doussot, who works with a group of committed growers across several Champagne villages rather than farming his own vineyards. Like its sibling Austral, Boréal is a Brut Nature, meaning zero dosage, allowing the wine's fruit and chalky terroir to show through with full transparency. The 2022 vintage delivers a crisp, mineral profile with green apple, citrus and subtle saline notes, reflecting Clandestin's parcel-by-parcel, soil-driven vinification philosophy. It is best served chilled as an aperitif or alongside oysters, sushi or other raw seafood. A characterful, small-production Champagne from one of the region's more distinctive emerging growers.
