Jurassique is a striking Vin de France white from Théo Dancer made from Savagnin, a variety more typically associated with the Jura than Burgundy, reflecting Dancer's willingness to experiment beyond classic Chassagne-Montrachet grape varieties. Vinified using native yeasts with no added enzymes, acids, fining or filtration, this 2024 bottling shows the variety's characteristic nutty, saline and citrus notes, with a fresh, textural finish at 12.5% alcohol. It is an intriguing, food-versatile white, well suited to Comté cheese, roast chicken, or curried dishes. Coming from a young winemaker who trained at his family's classified Chassagne-Montrachet estate before pursuing freer, natural winemaking under his own name, this is a genuinely different expression of Burgundian terroir and creativity.
