Hugues Pavelot
Hugues Pavelot is the négociant label of Maison Hugues Pavelot, the buying house Hugues Pavelot set up in 2014 alongside the family estate, Domaine Jean-Marc et Hugues Pavelot, at the same address in Savigny-lès-Beaune. The maison works from purchased grapes rather than from the family's own vines. Its range covers Savigny-lès-Beaune, Pernand-Vergelesses, Chorey-lès-Beaune, Aloxe-Corton, Beaune, Volnay and Saint-Romain.
Pernand-Vergelesses sits north of Savigny-lès-Beaune, on the western side of the hill of Corton. Les Belles Filles is a village-level climat there, registered as Sous le Bois de Noël et les Belles Filles, and is not a premier cru. The parcel worked under this label faces east on stony limestone and was planted in the 1990s. The family domaine is a separate operation of about seventeen hectares, including three hectares taken over from Domaine Écard since 2021, and it was certified organic in 2024.
Both wines listed here are Chardonnay. Les Belles Filles is direct pressed, lightly settled and fermented on ambient yeasts, then held twelve months in barrel, about fifteen per cent of it new, and filtered before bottling. The estate wines, including the Savigny-lès-Beaune premiers crus, appear separately under Jean-Marc et Hugues Pavelot. Arcana Cabinet lists two wines under the Hugues Pavelot label: Pernand-Vergelesses Blanc and Pernand-Vergelesses Les Belles Filles Blanc.
