Jean-Marc et Hugues Pavelot
Domaine Jean-Marc et Hugues Pavelot is a family estate in Savigny-lès-Beaune. The family's own records trace its winegrowing back to a Claude Pavelot working around 1700 at Pernand-Vergelesses. Jean-Marc Pavelot has handed over the running of the estate: Pierre-Yves Pavelot has been co-owner since 2013 and works alongside his brother Hugues, who looks after the vineyards. The domaine covers about seventeen hectares, including three hectares taken over from Domaine Écard since 2021, and it was certified organic (AB) in 2024. Maison Hugues Pavelot, the négociant house Hugues Pavelot founded in 2014, is a separate structure at the same address and is listed under Hugues Pavelot.
Savigny's vineyards lie on two slopes either side of the Rhoin: the Pernand-Vergelesses side on gravelly ground with oolitic ironstone, the Beaune side on limestone with more sand. The domaine holds six Savigny-lès-Beaune premiers crus: Aux Guettes, Aux Gravains, La Dominode, Les Lavières, Les Peuillets and Les Serpentières. La Dominode is an old-vine parcel within the Les Jarrons climat. Outside Savigny it holds Beaune 1er Cru Les Bressandes, village Aloxe-Corton from the Les Cras parcel, and a parcel of Corton Grand Cru planted to Chardonnay. Village Savigny-lès-Beaune is made in both colours.
The reds are eighty to one hundred per cent destemmed, fermentation runs on ambient yeasts, new oak is kept low, and the wines are unfined and only lightly filtered when necessary. The stated aim is freshness and fruit rather than extraction. Arcana Cabinet lists five wines from the domaine: the Savigny-lès-Beaune premiers crus La Dominode, Aux Guettes and Les Serpentières, the white Corton Grand Cru, and a regional Bourgogne Pinot Noir.
