La Dominode is an old-vine parcel within the Les Jarrons climat, classified premier cru in Savigny-lès-Beaune. Domaine Jean-Marc et Hugues Pavelot farms about seventeen hectares in Savigny, Beaune and Aloxe-Corton, three of them taken over from Domaine Écard since 2021, and was certified organic (AB) in 2024. Hugues Pavelot runs the estate with his brother Pierre-Yves, co-owner since 2013. Made from the oldest vines on the site, this cuvée shows dark cherry, spice and a firm, savoury backbone, and is built for cellaring. Pair with roast duck, venison or a mature Burgundy cheese.
