Red Savigny-lès-Beaune premiers crus: Pinot Noir from La Dominode, Les Jarrons, Aux Guettes and Aux Gravains.
Savigny-lès-Beaune lies just north of Beaune, in a side valley of the Côte de Beaune, with vineyards on both slopes. It is a red-wine village above all, Pinot Noir on clay-limestone and gravel, known for elegant, fragrant reds with red cherry, cranberry and a savoury, mineral edge.
La Dominode is a clay-limestone climat in the Hauts Jarrons sector, an old-vine parcel within Les Jarrons; Bruno Clair's vines there were planted in 1902. Les Jarrons itself, with an east to north-east exposure, gives a brighter, more mineral wine. Aux Gravains, with gravelly, well-drained soil, adds freshness and finesse. Aux Guettes is one of the six premiers crus farmed by the Pavelot family, alongside Aux Gravains, La Dominode, Les Lavières, Les Peuillets and Les Serpentières.
Compare La Dominode from Bruno Clair and from Jean-Marc et Hugues Pavelot to see how two growers read one climat. For a lighter, earlier wine, choose Les Jarrons or Aux Gravains.
Our cellar notes give 6 to 15 years for these premiers crus, with the old-vine La Dominode built for longer. Serve at 16 to 18 °C. They suit roast poultry, braised meats, roast game and mature cheese.
