Maison Pierre Bourée Fils has been producing and trading Burgundy wine from Gevrey-Chambertin since 1864, now run by the Vallet family who favor traditional, low-mechanization methods including manual harvesting. Les Cazetiers is a premier cru climat in Gevrey-Chambertin, and this 2017 bottling, made from Pinot Noir at 13% alcohol, shows the appellation's characteristic power and structure, with dark cherry, blackcurrant and earthy spice notes framed by firm tannins. Gevrey-Chambertin premier crus are built to age, and this bottle needs a few more years in the cellar. Pair with braised beef, game, or a mature hard cheese for a classic match.
