Les Hervelets is a Premier Cru climat of Fixin, a lesser-known but well-regarded Côte de Nuits village just north of Gevrey-Chambertin, and this Pinot Noir is made by Domaine Derey Frères, a family estate with vigneron roots traced back to the 1650s and formalised under its current name in the 1950s. Now run by the sixth generation of the Derey family, brothers Maxime, Romain and Pierre-Marie, the domaine farms 20 hectares from Marsannay to Gevrey-Chambertin, with careful attention to whole-cluster proportions since 2011. The 2021 Burgundy vintage was low-yielding, shaped by April frost and a cool, wet summer, generally giving fresher, lighter-bodied reds with pronounced red-fruit character. Expect red cherry, spice and a firm, structured frame. Pair with roast game, duck, or a mushroom-based dish.
