Les Crayères is an old-vine parcel farmed by Egly-Ouriet, the Ambonnay grower house whose family has farmed there since the 1930s and which Francis Egly has run since 1982. This Blanc de Noirs grand cru cuvée is made entirely from Pinot Noir, grown on a single Ambonnay lieu-dit planted in 1946 and 1947 on very chalky soil, and is given the estate's long lees ageing. Expect a deep Champagne with red fruit, dried apricot, toasted brioche and spice, a rich, textured mouthfeel and a long, saline finish. It goes with roast poultry, richer fish dishes or aged cheese.
