This bottling, made from 100% Pinot Noir under the Louis Baisinbert label, comes from the 2013 vintage, now with over a decade of bottle age. Expect a wine well into its drinking window, with tertiary notes of dried fruit, forest floor and leather layered over softened, resolved tannins. Best paired with roast game, braised beef or a mature washed-rind cheese to match its developed character.
