Compendium is a Saint-Aubin bottling from Joseph Colin, who is based in this Côte de Beaune village and founded his own domaine here in 2017 after years working at his father Marc Colin's estate. Made from Chardonnay, this wine reflects Joseph Colin's minimal-intervention philosophy: larger barrels, limited sulfur and lees stirring, and a focus on letting the vineyard speak. The 2023 vintage is youthful, with bright citrus and orchard fruit around a tightly wound, mineral core that opens up with a year or two in bottle. Saint-Aubin lies just behind Puligny-Montrachet and Chassagne-Montrachet. Pair with grilled fish, goat cheese or shellfish. A precise, purity-focused white from a highly regarded young Côte de Beaune winemaker.
