Domaine Jean-Jacques Confuron bottles its Chambolle-Musigny premier cru without naming a climat; the parcel holds the oldest vines on the estate and has been ploughed by horse since 2003. It is Pinot Noir, with the perfume of red cherry, rose and light spice over a silky texture and fine-grained tannin, framed by around half to sixty per cent new oak. Pair with roast duck, veal or a mushroom and truffle dish, and consider two to four years in the cellar.
