Les Chaboeufs is a premier cru climat of Nuits-Saint-Georges, worked by Domaine Jean-Jacques Confuron from Prémeaux-Prissey, where Sophie and Alain Meunier's son Louis now leads the winemaking. Expect the firmer register of the commune's premiers crus: dark cherry, plum and earthy spice framed by tannin with grip. A cold soak of four or five days precedes fermentation, and the premiers crus take around half to sixty per cent new oak. Decant and serve with braised beef, game or a mature cheese course.
