This non-vintage Brut DMY cuvée comes from Alexandre Filaine, the small-production Champagne label of Fabrice Gass, a former longtime Bollinger winemaker who farms just over a hectare of vines across ten plots in Damery, in the Vallée de la Marne, planted mainly to Pinot Noir alongside Chardonnay and Pinot Meunier. Gass makes his wines in a traditional style reminiscent of Champagne production a century ago, settling juice in old enamelled steel tanks and fermenting with native yeasts in old barrels, generally without malolactic conversion thanks to his fruit's naturally high acidity. It is a structured, vinous Champagne with orchard fruit, toasted brioche notes, and a fresh, mineral finish rather than a simple, fruit-forward style. Pair with shellfish, roast poultry, or a soft-ripened cheese. As a non-vintage cuvée, it is blended for a consistent house style from Gass's small-batch winemaking.
