Gueule de Loup is another Chardonnay-based lieu-dit bottling from Domaine Goisot, the Saint-Bris-le-Vineux estate whose family has grown vines in the Yonne since the 14th century. Today the domaine is guided by Guilhem Goisot, son of Jean-Hugues Goisot, one of Burgundy's early advocates for biodynamic farming, working the same Kimmeridgian limestone soils that give Chablis, a few kilometers away, its distinctive minerality. With over twenty years of bottle age, this 2004 vintage shows developed notes of honey, dried fruit and toasted nuts layered over the site's underlying chalky freshness. Pair with roast guinea fowl, aged cheeses or a rich seafood gratin.
