Biaumont is a Chardonnay-based Bourgogne Côte d'Auxerre from Domaine Goisot, based in Saint-Bris-le-Vineux in the Yonne, an area sharing the chalky Kimmeridgian limestone soils found a few kilometers away in Chablis. The estate traces its roots in the village to the 14th century, with the modern winery established in 1979 and now guided by Guilhem Goisot, son of Jean-Hugues Goisot, who was among Burgundy's early proponents of biodynamic viticulture. This 2004 vintage has had two decades of bottle age, and shows the honeyed, nutty complexity that well-made Côte d'Auxerre Chardonnay develops with time, alongside its characteristic mineral backbone. Serve with roast chicken, aged Comté or mushroom dishes.
