Aligoté is Burgundy's other white grape, and this regional bottling comes from Domaine Georges Joillot in Pommard. The estate was founded at Pommard in 1929 by Robert Joillot; his grandson Jean-Luc took over in the early 1980s with six hectares and ran it for close to forty years as Domaine Jean-Luc Joillot, and the name changed to Domaine Georges Joillot only from the 2019 vintage, in memory of Jean-Luc's father Georges. The fourth generation runs it today: Jeanne Joillot, Grégoire Guidot and Simon Goutard, who has been responsible for the vinifications since 2015. The domaine works about 14 hectares split into some 60 parcels, mostly in Pommard, with further holdings in Beaune and Volnay, under lutte raisonnée. The 2021 vintage, at 12% alcohol, shows green apple and lemon with a lively, saline finish. Serve as a Kir with a dash of crème de cassis, or alongside oysters and goat cheese.
