Sylvain Pataille built his own domaine in Marsannay from a single hectare in 1999 into roughly 15 hectares today, while also consulting for numerous other Burgundy estates. He gives Aligoté, Burgundy's often-overlooked white grape, a prominent place in his range, with several single-site cuvées. This 2023 Bourgogne Aligoté is made with long, slow pressing, native-yeast fermentation and minimal sulfur, resulting in a wine with bright citrus, green apple and a distinctive saline, mineral edge. It is a versatile, refreshing white that pairs well with oysters, goat cheese or as the base for a classic kir.
