Les Méchalots is a regional Bourgogne Blanc cuvée from Sylvain Pataille, the Marsannay-based winemaker who established his domaine in 1999 and also consults for many Burgundy estates. Made from Chardonnay, as is standard for regional Bourgogne Blanc, the 2023 vintage is vinified with long, gentle pressing, native yeasts and minimal sulfur additions, in keeping with Pataille's low-intervention approach across his roughly 15 hectares of vines around Marsannay. Expect a fresh, mineral white with citrus and orchard fruit, subtle floral notes and good acidity. It pairs well with shellfish, poultry in cream sauce or a simple goat cheese salad. An accessible, well-crafted white from a producer known for his meticulous, hands-on viticulture.
