Domaine Georges Joillot bottles this village Pommard as Vieilles Vignes, or old vines. The average vine age is about 55 years across the 11 parcels that make up the cuvée, on oolitic limestone and gravel soils. The estate was founded at Pommard in 1929 by Robert Joillot. His grandson Jean-Luc took over in the early 1980s with six hectares and ran it for close to forty years as Domaine Jean-Luc Joillot; the name changed to Domaine Georges Joillot only from the 2019 vintage, in memory of Jean-Luc's father Georges. The fourth generation runs the property today: Jeanne Joillot, Grégoire Guidot and Simon Goutard, who has been responsible for the vinifications since 2015. The domaine farms about 14 hectares over some 60 parcels under lutte raisonnée. Grapes are picked by hand, fully destemmed and fermented in concrete vats of 30 to 50 hectolitres for about two weeks, then aged 12 to 14 months in Burgundy oak barrels, of which 20 to 30 per cent are new, and bottled in winter without filtration. The 2020 vintage, at 13.5% alcohol, shows dark cherry and plum fruit with the firm, savoury structure typical of Pommard. Serve with braised short rib, game or a mature cheese board.
