Cuvée de Noble Souche is Domaine Denis Mortet's regional Bourgogne Rouge, Pinot Noir from high-altitude plots, where the fruit ripens later than on the Côte itself. Denis Mortet set up under his own name with four and a half hectares inherited from his father Charles, and since his death in 2006 the domaine has been run by his son Arnaud, with his mother Laurence and his sister Clémence. The 2022 shows fresh red and black cherry with a touch of spice and supple tannins. It drinks well with minimal decanting and pairs with bistro cooking: roast chicken, charcuterie or a simple beef stew.
