Hommage à Georges Popille is not a climat but a cuvée name: Domaine Georges Joillot blends two parcels classified Beaune premier cru and bottles them under this tribute label. The two parcels cover 0.26 hectares, with vines of about 35 years, on white limestone facing south to south-east. The estate was founded at Pommard in 1929 by Robert Joillot; his grandson Jean-Luc took over in the early 1980s with six hectares and ran it for close to forty years as Domaine Jean-Luc Joillot, and it was renamed Domaine Georges Joillot only from the 2019 vintage, in memory of Jean-Luc's father Georges. The fourth generation is in charge today: Jeanne Joillot, Grégoire Guidot and Simon Goutard, who has handled the vinifications since 2015. The domaine works about 14 hectares over some 60 parcels, mostly in Pommard, under lutte raisonnée. Grapes are fully destemmed and vatted in concrete for about two weeks, then aged 12 to 14 months in Burgundy barrels of which 20 to 30 per cent are new, and bottled in winter without filtration. The 2020 vintage, at 13.5% alcohol, shows the softer, more open fruit of Beaune and a gentler tannic structure than neighbouring Pommard. Serve with roast chicken, duck or a mild cheese.
