Trousseau is the deeper-coloured and more structured of the Jura's two native red grapes, and Domaine des Marnes Blanches grows it on marl soils in the Côtes du Jura near Cesancey. It shows dark red berry fruit, a peppery edge and firm tannin, with more grip than the domaine's Poulsard. Pauline and Géraud Fromont, who founded the estate in 2006 after returning to their native Jura, ferment on wild yeasts and handle the fruit gently; the vines are worked by hand with the rows ploughed. Serve with duck, charcuterie or hard cheeses.
