This Vin de France from Domaine des Marnes Blanches takes fruit from the En Quatre Vis parcel in the Côtes du Jura and ferments it on the skins. Extended skin contact on a white falls outside the appellation rules, so the wine is bottled as Vin de France. It is amber in colour and textured, with dried apricot, orange peel and chamomile, and a tannic grip unusual in a white. Pauline and Géraud Fromont work with native yeasts and little intervention; the vines are worked by hand with the rows ploughed. Serve with spiced dishes, aged cheeses or fermented foods.
