En Quatre Vis is a single parcel that Domaine des Marnes Blanches, the Jura estate of Pauline and Géraud Fromont, bottles on its own. The Savagnin is made ouillé, kept topped up in barrel rather than left to oxidise as for Vin Jaune, and shows apple, citrus zest and a mineral, saline finish. The marl soils of the Côtes du Jura give the wine length. The vines are worked by hand, the rows ploughed. It suits poultry in cream sauce, mature Comté, or the regional dish of chicken with morels.
