Lavaux Saint-Jacques is the largest premier cru of Gevrey-Chambertin, sitting at the mouth of the Combe de Lavaux and running up along the wall of Clos Saint-Jacques, where the breeze down the combe keeps the site cool. Domaine Arnaud Mortet works a parcel here. The estate was created in 2016, when Arnaud Mortet and his sister Clémence took on about four hectares in the village from a retiring grower; the fruit is vinified in the Denis Mortet cellar to the same recipe as the family range. The 2020 is Pinot Noir at 13% alcohol, sorted three times and destemmed to leave the berries whole, with a proportion of whole bunches, native-yeast fermentation and around seventeen months in barrel. It shows dark cherry and blackberry, spice and a firm, structured finish. Pair with braised short rib, venison, or aged cheeses.
