Bénédicte et Stéphane Tissot
Domaine André et Mireille Tissot was founded in 1962 at Montigny-lès-Arsures, a commune within the Arbois appellation in the Jura. Stéphane Tissot, son of the founders, joined for the 1989 harvest and took over in 1990 with his wife Bénédicte. The estate keeps the founders' name, and the wines are also labelled Bénédicte et Stéphane Tissot. The vineyards were certified organic in 1999 and have been certified biodynamic by Demeter since 2004.
The estate works parcel by parcel across Arbois, Côtes du Jura, Château-Chalon, Crémant du Jura and Macvin du Jura, using the five Jura varieties: Chardonnay, Savagnin, Poulsard, Trousseau and Pinot Noir. Chardonnay is bottled from named sites including La Mailloche and Les Bruyères in Arbois, En Barberon in the Côtes du Jura, and the Clos de la Tour de Curon, a small parcel replanted in 2002 at high vine density. Savagnin is made in two ways: ouillé, with the barrels topped up so that no veil forms, and sous voile, left unfilled under a film of yeast. The domaine also bottles single-parcel Vin Jaune and a Château-Chalon. Vin Jaune is Savagnin aged in cask under the veil without topping up for a minimum of six years and three months before bottling in the 62cl clavelin; Château-Chalon is an appellation for Vin Jaune alone.
The topped-up whites run to citrus and orchard fruit, the sous voile bottlings to walnut, dried fruit and curry spice, and the reds are pale in colour with red fruit and a savoury edge. Alongside the still wines the estate produces Crémant du Jura, Vin de Paille and Macvin. Arcana Cabinet lists six wines from the domaine: Chardonnay Patchwork, a blend of Arbois parcels; Chardonnay and Pinot Noir from En Barberon in the Côtes du Jura; Savagnin Sous Voile; Trousseau raised in amphora; and DD, an Arbois red of Trousseau, Poulsard and Pinot Noir.
