Savagnin "Sous Voile" is one of the Jura's traditional white styles, made here by Domaine André et Mireille Tissot in the Arbois appellation. The wine ages in barrel without topping up, under a veil of yeast (the voile), which develops flavours in the register of fino sherry although the wine is not fortified. Produced by Bénédicte and Stéphane Tissot at Montigny-lès-Arsures, it shows oxidative notes of walnut, curry spice, dried apple and a saline tang alongside the grape's natural intensity, reaching 14.5% alcohol in the 2022 vintage. The domaine also bottles whites in the opposite, topped-up style known as ouillé, where the barrels are kept full so that no veil forms. This bottling is not Vin Jaune, which is Savagnin aged a minimum of six years and three months under the veil and bottled in the 62cl clavelin. Pair with Comté aged over 24 months, roast chicken with morel cream sauce, or curried dishes.
