"Patchwork" is a Chardonnay cuvée from Domaine André et Mireille Tissot, the Jura estate run by Bénédicte and Stéphane Tissot at Montigny-lès-Arsures, a commune within the Arbois appellation. The domaine was founded in 1962 by André and Mireille Tissot and works parcel by parcel; the vineyards were certified organic in 1999 and have been certified biodynamic by Demeter since 2004. As its name suggests, Patchwork blends fruit from several plots and soil types within the Arbois appellation. It is raised in the ouillé style, with the barrels topped up so that no veil of yeast forms, and shows orchard fruit, citrus and a mineral finish. This 2022 is presented in a 150cl magnum, a format that slows evolution in bottle. Pair with Comté, roast chicken with morels, or a creamy vol-au-vent.
