This village-level Chablis from Domaine Billaud-Simon is made from Chardonnay grown on the Kimmeridgian limestone soils that define the appellation. Billaud-Simon traces its history to 1815 and owns 17 hectares that include four grand crus and four premier crus; the Faiveley family, established Burgundy negociants, acquired the estate in 2014. Fermentation relies on indigenous yeasts and ageing takes place largely in temperature-controlled stainless steel, preserving the steely, mineral style for which Billaud-Simon is known. The 2020 vintage shows citrus, green apple and a distinctive flinty, saline character typical of Chablis, with bright acidity that suits oysters, other shellfish or a simple goat cheese.
