Vaulorent is a premier cru climat of Chablis that sits just below the grand cru slope, sharing some of the depth and mineral intensity of the grands crus above it. Billaud-Simon, founded in 1815 and owned since 2014 by the Faiveley family, farms 17 hectares of vines across Chablis including several premier and grand cru sites, relying on native-yeast fermentation and largely stainless-steel ageing to preserve the appellation's characteristic freshness. The 2020 Vaulorent shows citrus zest, white flowers and a pronounced flinty, saline minerality, with more concentration and length than a standard village Chablis. It pairs with raw oysters, grilled sole or other simply prepared white fish, and has the structure for a few years of cellaring.
