Domaine Simon Colin's regional Bourgogne Blanc is made entirely from Chardonnay, from vines in Burgundy's Côte de Beaune. Simon Colin is the son of Philippe Colin and the nephew of Bruno Colin. He trained with his uncle and worked as assistant winemaker at Domaine Étienne Sauzet, started his own label in 2017 buying grapes from other growers, and took over 9.3 hectares of his father's vines from the 2021 vintage. He aims for more acidity and less wood influence, with an élevage of twelve to fifteen months and a limited share of new oak. Expect fresh citrus, green apple and white flower aromatics with a crisp, precise finish. It pairs well with goat cheese salad, grilled sole or a simple seafood pasta.
