This Chassagne-Montrachet Premier Cru comes from Les Chaumées, a climat on the upper slope in the north of the commune. It is made by Domaine Simon Colin, based at Chassagne-Montrachet. Simon Colin started his own label in 2017, at first buying grapes, and took over 9.3 hectares of his father Philippe Colin's vines from the 2021 vintage, having trained with his uncle Bruno Colin and worked as assistant winemaker at Domaine Étienne Sauzet. He aims for higher acidity and less wood influence, with an élevage of twelve to fifteen months and a limited share of new oak. Expect citrus, orchard fruit and a fine, saline minerality, with tension and precision on the finish. Serve with pan-seared scallops, a creamy fish velouté or soft cheeses.
