Les Caillerets is a Chassagne-Montrachet premier cru high on the slope beside En Virondot, on clay-limestone soils, and Domaine Marc Morey works two thousand square metres of it. The 2022 is Chardonnay at 13.5% alcohol. Sabine Mollard runs the estate, which her family founded in the village in 1919. Farming is lutte raisonnée, with the soils ploughed through the year and the crop picked by hand; as one of the domaine's two top premiers crus it runs up to twelve months on its lees in barrel, then three months in vat, with new oak at around a third. Expect a taut white with citrus, white flowers and a flinty, mineral finish. Serve with grilled langoustine, a rich fish velouté or aged goat cheese.
