En Champans is a premier cru vineyard on the middle of the Volnay slope, limestone with pale brown soil in its upper part and heavier red-brown clay below, where Domaine de Montille holds 0.96 hectares. Volnay is the home village of the estate: the family holding had fallen to about 2.5 hectares by the end of the Second World War, and Hubert de Montille took charge in 1947 and rebuilt it over the following decades. His son Etienne runs the domaine today, which works around 35 hectares across the Côte de Beaune and the Côte de Nuits, farmed organically since 1995 and biodynamically since 2005, certified by Ecocert. The wine is Pinot Noir, vinified with a proportion of whole bunches and matured in oak, with new barrels kept to a minority of the total. Serve with roast poultry, veal or mushroom dishes, and expect it to reward some years of bottle age. Select your preferred vintage above.
