Chevalier-Montrachet is a grand cru of the Côte de Beaune, lying on the slope immediately above Le Montrachet in the commune of Puligny-Montrachet. Domaine de Montille owns 0.23 hectares there, which came to the estate with its 2012 purchase of Château de Puligny-Montrachet, completed with the remaining holdings in 2017. At 13% alcohol, the 2019 shows white flowers, citrus oil and toasted hazelnut, with concentration and a long, saline finish. The domaine is based in Volnay and run by Etienne de Montille, son of Hubert, who took charge in 1947 and rebuilt the estate; it works around 35 hectares across the Côte de Beaune and the Côte de Nuits, farmed organically since 1995 and biodynamically since 2005, certified by Ecocert. Pair with lobster, turbot or fine fish in a cream sauce.
